Hello and welcome to Empowering Nourishment! I’m Amber.
For as long as I can remember, I have loved food. Eating food, cooking food, buying food, binge watching Food Network, I love it all. Growing up I was always the baker in my family, eager to test out recipes and make my friends any dessert they wanted for their birthdays. So, you can imagine that when I was diagnosed with Celiac Disease at the age of 18 I was incredibly disappointed, and confused. Suddenly, many of my favorite foods were permanently taken away.
Luckily, my diagnosis opened up a whole new world of food to me, I spent countless hours of my time poring over gluten free food blogs and cookbooks, and I learned I can still make amazing food despite being gluten free. As my diet has changed over the years due to different food intolerances, I like to consider myself something of a “kitchen MacGyver,” because with a few seemingly strange ingredients I can come up with something delicious to make.
While I was experimenting with different diets and seeing positive changes in my health based on the foods I was eating, I began to get even more interested in nutrition and started reading books, listening to podcasts, and following the blogs many Functional Medicine Doctors. As someone who always avoided science throughout school, I was surprised how fascinating I found all of this. After a few years, I decided to turn my passion for nutrition into a career and enrolled to become a certified Health Coach and Nutritional Therapy Consultant through the Nutritional Therapy Association. I will be able to start seeing clients 1-on-1 in November of 2016 to help them achieve health through food.
My hope is that with this blog I can help others feel empowered to find the ideal diet to truly nourish their bodies by sharing my knowledge, while providing recipes that will ensure that you never feel deprived and keep you focusing on all the nutrient dense, whole foods that you can eat.
