I’ve been dreaming of these popsicles for some time now, and I have no clue what took me so long! Like much of the rest of the world, I am OBSESSED with cold brew right now, specifically Chameleon Cold Brew. It is so smooth and, especially since working from home and the summer heat, I’ve come to look forward to it as my favorite afternoon treat. I prefer their vanilla cold brew concentrate, diluted with a little bit of water, made creamy with coconut milk, and sweetened with just a hint of maple syrup. Which is exactly what these caramel cold brew popsicles are!

The caramel is made of maple, vanilla, and coconut milk and takes a bit of patience to come together but is so worth it. The popsicles are just a bit of full-fat coconut milk (which makes them ultra-creamy), cold brew concentrate, a bit of collagen peptides to provide a bit of protein and a healthy nutritional boost, and caramel for sweetness. After the popsicles freeze, you can also drizzle them with a little extra caramel if you want. The best part? Since these are caffeinated, you should probably have one in the middle of the day… or maybe for breakfast. I won’t tell!

A few final  things on these popsicles. Make sure you are using cold brew concentrate for these! You can either buy Chameleon, or make your own. You can also add 1-2 Tbs of cocoa powder for a mocha cold brew popsicle spin! If you aren’t a coffee fan, I’d replace the coffee with almond milk or light coconut milk for a plain vanilla-caramel popsicle, which would also be delicious! Also, these are the molds I used to create the popsicles, but feel free to use whatever you can find. Enjoy!

Paleo Caramel Cold Brew Popsicles

These Paleo Caramel Popsicles are creamy, easy to put together, and perfect for a hot summer day!

Servings 6

Ingredients

For the Caramel

  • 1 Can Full-Fat Coconut Milk
  • 1/2 Cup Maple Syrup (may also use coconut sugar)
  • 1 tsp Vanilla Extract (or 1/4 tsp vanilla bean powder)
  • 1/4 tsp Baking Soda

For the Popsicles

  • 1 Can Full-Fat Coconut Milk
  • 8 Ounces Cold Brew Concentrate
  • 1/4 Cup Collagen Peptides *optional
  • 1/4 Cup Caramel
  • 1 tsp Vanilla Extract

Instructions

For the Caramel

  1. Combine all ingredients for caramel in medium-sized saucepan and heat to medium heat. Allow ingredients to come to a bubble, then lower temperature slightly and simmer for about 45 minutes until mixture is thickened and coats the back of a spoon, stirring every 10 minutes or so.

For the Popsicles

  1. Combine all popsicle ingredients either in a blender or in a bowl to blend with an immersion blender. 

  2. Pour popsicle mixture into 6 popsicle molds. Freeze for at least 2 hours.

  3. Top frozen popsicles with extra caramel, if desired.
