Happy Friday everyone! I am off to work this morning and taking off early to head to the beach this weekend, and I couldn’t be more excited to relax a bit and escape the heat! So, I’m giving you a super simple, but delicious recipe today that is perfect for a weekend treat.
This week I’ve been giving up chocolate as part of an experiment. Hopefully an experiment that will prove I can definitely eat chocolate and feel fine, because what’s a life without chocolate? I have to say, I’m pretty accustomed to giving foods up but this has been HARD. My body seems programmed to want the couple of squares of dark chocolate I eat before bed.
Thats where this “milkshake” comes in! Last night when I was desperately craving my evening treat and considering going to buy a chocolate bar (I live too close to the grocery store, it is a problem), I decided to look in my fridge to see what was in there and this shake was born.
It is amazing how much sweeter natural foods taste once you give up sugar. I used to think people were lying when they said this but now that I’ve done it I can say that fruit tastes even better and sweeter now than it did before. When I reach for fruit I tend to select berries because they are sweet, but much lower on the glycemic index and high in antioxidants. With the half cup of strawberries in this smoothie you’ll only wind up with 4 grams of sugar and net carbs. Not bad at all!
You can do a few variations with this shake. If you’re making it as a snack or dessert there’s no need to add protein powder. If you want to make it creamier, add more coconut milk and less almond milk. Add a teaspoon of cocoa powder for a chocolate covered strawberry shake (yep, I can’t stop thinking about chocolate). Finally, you can add any type of nut butter you want (or don’t add any at all!), but I find adding sun butter or peanut butter creates a combo that reminds me of a PB&J!

Recipe: Strawberry Milkshake
1/2 cup or about 50 grams Strawberries
1/2 tsp Vanilla
1/3 Cup Coconut Milk (use 1/2 cup for a creamier smoothie)
3/4 Cup of Almond Milk
1 Tbs Nut Butter of your choice
5 drops liquid stevia (optional)
1 Scoop Protein Powder (optional)
1 Scoop Collagen Peptides (optional)
1 Handful of Ice
Put all ingredients into blender and blend. If smoothie is too icy, add more almond milk until desired consistency is reached.
