Jalapeño Bacon Burger Meatballs

These flavorful Jalapeño Bacon Burger Meatballs are everything about your favorite burger wrapped up into one delicious package! They are totally grain free, gluten free, and low-FODMAP friendly, and perfect for a weeknight meal or as a party appetizer!

  • 2 pounds ground beef
  • 1 tablespoon coconut flour
  • 1 tablespoon tapioca starch
  • 1/2 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 tablespoon water
  • 1 teaspoon coarse sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (omit for low FODMAP)
  • 1/2 tablespoon coconut aminos (may substitute with 1 teaspoon gluten free tamari)
  • 1 tablespoon dijon mustard
  • 1/2 tablespoon dried parsley
  • 2 tablespoons thinly sliced green onion
  • 1 large egg
  • 1/2 cup white cheddar cheese, cut into small cubes
  • 6 strips bacon, cooked and crumbled
  • 2-4 tablespoons chopped mild pickled jalapenos, according to spice preference (optional)


  1. Preheat oven to 400 F.

  2. Combine the baking soda, cream of tartar, and water in a small bowl.

  3. In a large bowl, combine all ingredients, including baking soda mixture.

  4. Shape the ground beef mixture into 1.5-2 inch balls, trying to push cheese further to the center of each ball, and place on a rimmed baking sheet. 

  5. Bake for 20 minutes, let cool for 5 minutes, then serve with your favorite sauce!
